2 cups firm tofu, drained and coarsely grated
1 stem of lemongrass, finely chopped
3 cloves of garlic, chopped
1 piece of fresh ginger, grated
2 lime leaves, finely chopped
2 small red onions, finely chopped
2 green chilis, finely chopped
1/4 cup fresh cilantro, chopped
3/4 cup all purpose flour
1/2 teaspoon salt
Oil for frying
Mix the tofu, lemongrass, garlic, ginger, lime leaves, onions, chilis, cilantro in a mixing bowl.
Add flour and salt to make a course, sticky paste
Chill in the fridge for 1 hour to let the mixture become slightly firm
Form the mixture into large walnut-sized balls, flatten into patties
Use enough oil to coat the bottom of a large wide pot over medium heat.
Shallow fry for 4-6 minutes or until golden brown
Serve with Thai salad or sweet and chili sauce
